Ingredients
- 2 artisan bread rolls, sliced in half lengthwise
- 8-10 ounces rotisserie chicken (or cooked chicken breasts)
- 1/4 – 1/2 cup fresh baby spinach or arugula
- 1/4 cup cherry compote
- 4-6 ounces creamy, spreadable brie
This sandwich is the perfect balance of flavors, textures and color - with the cherry compote being the literal cherry on top.
Instructions
- Lightly toast the bread until crisp on the outside but soft on the inside.
- Divide the chicken evenly between the bread, then top with the spinach or arugula.
- Top each sandwich with the cherry compote (it will be a bit messy).
- Spread the brie evenly across the top of each slice of bread, then gently form the sandwiches. If desired, slice in half crosswise.
