Ingredients
- 6 Triscuit brand snack crackers (or similar whole wheat crackers)
- 1 large fresh Washington apricot
- 2 tbsp cream cheese
- Sugar or honey (to taste)

Instructions
- Assemble the apricot bites, by placing all six Triscuits face up on a plate.
- Spread each cracker with cream cheese.
- Slice an apricot thinly, and place 2 to 3 slices on each of the cream cheese crackers.
- Sprinkle with sugar or drizzle with a little honey.
- Enjoy!
