Ingredients
- Caramelized Apples
- 2 Stemilt SweeTango® Apples, peeled, cored, and sliced
- 2 tbsp water
- 2 tbsp brown sugar
- 1 tsp cinnamon
- Pancakes
- 1 1/2 cups all-purpose flour
- 1 tbsp white sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1 1/2 cups milk, room temperature
- 1 egg, room temperature
- 3 tbsp melted butter
- Maple syrup, for serving
These Pancake Tacos are simple, savory, and sweet making them the perfect breakfast recipe for the family.
Instructions
- In a large skillet, brown the sausage over medium heat until dark brown and crispy. Drain and set aside.
- In a large skillet over medium-low heat, add the apples, water, brown sugar, and cinnamon.
- Cook, stirring occasionally, until the liquid has thickened and apples are soft, 5-8 minutes.
- Remove from heat and set aside.
To make pancake batter:
- Whick together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Create a well in the middle and add the milk, egg, and melted butter.
- Whisk until no longer lumpy. The mixture should be thick but pourable, add more milk if needed.
- Set a large skillet over medium heat. Grease with nonstick cooking spray.
- Spoon about ⅓ cup of the batter into pancakes about 4-5 inches wide.
- Cook until browned, about 3 minutes each side. Repeat until no batter remains.
To assemble the tacos:
- Spoon apples and sausage onto pancakes and form into taco shape. Drizzle with maple syrup and serve.
