I grew up in a very health conscious family. My mom didn’t believe in sugary cereal or having pop anytime my brother and I wanted. It was viewed as a treat and we could have it on special occasion. She often told us little nuggets of information like, “Eat your broccoli! Think of it as a scrub brush that moves through your body and cleans out all the yucky stuff!” Another favorite of mine was, “Eating oatmeal is like placing a really big log in the fireplace. It breaks down slow and keeps the fire burning!” Or “fueling your body with the right food is like putting gas in your car. If you put the wrong gas in, you won’t be able to go anywhere!”
As a kid, I often shrugged off these nuggets and found myself annoyed that I couldn’t gobble down a bowl of ice cream anytime I wanted. But now as an adult, I am so grateful that she taught me these things as it one, not only helps me eat well and stay balanced, but it is also information that I will teach my girls as they grow up and begin to make their own decisions about eating a balanced diet.
One tidbit of information that my mom told me when I was older was this: “The more colorful the plate, the healthier it will be.” To put this conversation in context, we were eating a salad at the time, but I also feel that this tidbit of info could also be applied to this beautiful Fruit Pizza that our friend, Chelsea from A Duck’s Oven created.
Many fruit pizza recipes often call for a sugar cookie crust, but Chelsea took it another route and threw in a healthy twist: Zucchini crust! She made her own (which is an easy to step to do). While the crust bakes, you can mix up the “sauce” and slice up the fruit to include on the top of the pizza. Toppings in this pizza include Stemilt’s delicious dark-sweet cherries (because they’re in season while this pizza was made), our Piñata® apples, kiwi and blueberries. However, the beauty of a recipe like this, is that you can really add on any sort of fruit that sounds good to you!

Fruit Pizza With Zucchini Crust
Ingredients
- Zucchini Crust:
- 3 small to medium sized zucchini
- 3 large eggs
- 4 oz (half a block) of cream cheese, softened
- 1/4 cup coconut flour
- 1/2 tsp kosher salt
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 3 tbsp milk
- Toppings:
- Chopped cherries
- Thinly sliced Piñata® apples
- Sliced kiwi
- Blueberries

Instructions
- Preheat oven to 375 degrees F.
- Shred zucchini. Place shredded zucchini in cheesecloth. Wrap it tight and squeeze as much liquid out as you can. If you want, save the liquid for a smoothie or juice! It should yield about 3 cups.
- Add the shredded and drained zucchini, eggs, and cream cheese to a medium bowl. Mix together with a fork, breaking up the cream cheese pieces until the mixture is well incorporated.
- Add coconut flour and salt to the zucchini mixture and mix to combine.
- Line a large square baking sheet with parchment paper. Spread the zucchini mixture into a large circle about ⅛ inch thick on the parchment paper.
- Bake in preheated oven for 15-20 minutes, or until the top is golden brown.
- While the crust is baking, make the frosting. Use a mixer or handheld mixer to beat the cream cheese until fluffy, about 3-5 minutes. Add the powdered sugar and beat for another 2-3 minutes. Add milk, 1 tbsp at a time, until desired consistency is reached.
- When the crust is completely cool, spread cream cheese frosting over the top. Top the pizza with the fruit and slice like a pizza before serving.
