Ingredients
- 1 Piñata® apple, diced
- 2 c oats, divided
- 2 tsp lemon juice
- 1/4 c walnuts
- 2 tbsp ground flaxseed
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp salt
- 1/2 tsp vanilla
- 3 tbsp peanut butter
- 1/3 c raisins
These apple energy bites with Piñata® apples are perfect for an on-the-go pick me up.
Instructions
- Dice the apple. Then, grind up 3/4 cups of the oats to a fine powder.
- Add the lemon juice, walnuts, flaxseed, spices, salt, vanilla, and peanut butter. Blend until combined.
- Add the 1 1/4 cups of oats and pulse lightly to combine.
- Scrape the mixture into a bowl, and stir in the raisins.
- Roll the mixture into balls, and store in the fridge for up to three days.
