Apple Cider Vinaigrette with Five Ingredients – Video

Isn’t it wonderful when spring finally decides to make an appearance? After what seemed to be a never-ending winter here in Washington State, the smell of fresh cut grass, emergence of tulips and daffodils, and glimpses of sun have been an extremely refreshing change of pace.

Another common activity many look forward to during this beautiful and invigorating time of the year is BBQ season! Both my family and in-laws love to get together on Saturday afternoons, because who doesn’t enjoy sunshine and fresh air? Whenever we gather for a day of yard games and burgers, it’s safe to say I’m volunteered to bring one of two items: a salad or a dessert. If I ask my mom, it’s salad, but my dad votes for dessert. (Like I said in my last blog post, life is a balance.)

Since I talked about Apple Walnut Cake in my last post, it’s best to balance it out and chat about a delicious, healthy and EASY salad dressing that works well on any salad: Apple Cider Vinaigrette.

I’ve been whipping up this dressing for years, and the great thing is it’s versatile and impossible to get wrong. With some basic ingredients such as Dijon mustard, balsamic vinegar, olive oil, honey and apple cider vinegar, all you do is throw everything into a mason jar, shake, and taste.

Something I’ve learned over the years while making apple cider vinaigrette is that my preferred taste buds have changed, so the ingredient amount listed below is a guideline to get you started. There are days I crave more tartness than sweet, so I’ll add in extra vinegar. Sometimes, I add too much vinegar and need to sweeten it up, so in goes an extra bit of honey. The point is, you make the dressing to your liking.

Apple cider vinaigrette pairs with a variety of salads, but my favorite is a bed of mixed greens with chopped walnuts, thinly sliced Stemilt Pink Lady apples and a dash of salt and pepper. Top with this dressing and you have a satisfying and flavorful meal.

Ingredients

  • 2 tsp Dijon mustard
  • 3 tbsp raw apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
